Look for the recipe at the bottom; it's a luscious way to make the most of fresh tomatoes.

CONCENTRATED TOMATOES

PG TESTED

Concentrated Tomatoes make an attractive side dish with grilled chicken or shrimp. And they're absolutely wonderful chopped and tossed with pasta and basil or fresh green beans. They last about one week in the fridge and they can be frozen. The texture will be affected but not the flavor.

  • 3 pounds plum tomatoes, halved
  • 1/4 cup extra virgin olive oil, plus more if needed
  • 1 teaspoon chopped fresh oregano
  • 1 1/2 teaspoons chopped fresh rosemary
  • 1 teaspoon sugar
  • Kosher salt and freshly ground black pepper

Preheat oven to 300 degrees. Toss tomatoes with enough olive oil to coat them liberally (about 1/4 cup) and place them cut side down on a baking sheet that has sides.

Sprinkle the oregano, rosemary and sugar over them and season lightly with salt and pepper.

Cook the tomatoes until they are quite concentrated with a very deep red color; this will take 3 1/2 to 4 hours. They should look dry on the outside but retain some moisture within. Cool to room temperature, peel away the loose skins and store in an airtight container in the refrigerator.

Makes about 30 halves.
